*** Observed cooked shrimp and multiple sliced vegetables without proper date-label. ***COS PIC had labels put on all items in need of a label in the walk-in cooler. - 3-501.17 (A-B) (E-G): (A)Except when PACKAGING FOOD using a REDUCED OXYGEN PACKAGING method as specified under § 3-502.12, and except as specified in ¶¶ (E) and (F) of this section, refrigerated, READY-TO -EAT, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5ºC (41ºF) or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. (B) Except as specified in ¶¶ (E) - (G) of this section, refrigerated, READY-TO-EAT TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and PACKAGED by a FOOD PROCESSING PLANT shall be clearly marked, at the time the original container is opened in a FOOD ESTABLISHMENT and if the FOOD is held for more than 24 hours, to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded, based on the temperature and time combinations specified in ¶ (A) of this section and: (1) The day the original container is opened in the FOOD ESTABLISHMENT shall be counted as Day 1; and (2) The day or date marked by the FOOD ESTABLISHMENT may not exceed a manufacturer’s use-by date if the manufacturer determined the use-by date based on FOOD safety. (E) Paragraphs (A) and (B) of this section do not apply to individual meal portions served or rePACKAGED for sale from a bulk container upon a consumer’s request. *** Observed the floor under the 3-compartment sink and by the fryer to have a buildup of debris and residue. *** Ensure that these areas are routinely cleaned and maintain routine cleaning. - 6-501.12: (A)PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean.(B)Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of FOOD is exposed such as after closing. - V |
Inspection Comments |
-There is a non-commercial grade fridge being used by the fryers. If this fridge breaks down or stops holding proper temps, a commercial grade fridge will need to be purchased. -Ensure that personal cooking equipment and personal food items are easily distinguishable from facility equipment and retail food items. -The prep fridge across from the woks were holding in the 50s, temps were dropping. Internal temperature gauges were at 40F. Ensure that the doors to this fridge remain closed as much as possible to prevent internal food temps from entering the temperature danger zone. |
